An alcoholic will drink whatever he/she can find. And the Colonials are human, after all. A good number of us tend to rely on alcohol, at least to destress. I'm very sure there is more than one distillary, plus some of the fleet are a bit more luxurious, so there's got to be some stash somewhere.

The bunks of the pilots are very much like military sea vessls of today. They need to be all packed in, and approachable all at once in an emergency. Especially in these circumstances, they don't get time off to speak of.
